I was feeling a little overwhelmed at work yesterday. I had a schedule jam packed with way too much….especially for a Friday. My last patient of the day about melted my heart. Maybe it’s the hormones? But when we wrapped up, I asked if I could give her a hug. I sensed she needed it. And maybe I did, too. She cried and her firm exterior melted in my arms into an ooey gooey mess. #RDtotherescue

Despite being emotionally and physically drained, I pulled the shades to my office (how convenient, yet weird!), changed into my workout clothes, and pounded out a quick workout at the hospital gym before heading home for the week. Finally.

When I walked in the door just after 7pm, Mr. Prevention was…in bed. And my stomach was GROWLING. I had surpassed the point of hunger and at that point, was very hangry. Never good, especially for an exhausted pregnant woman.

I received a grumble as he flopped over in bed. He then said he’d be up soon and we could go to dinner. When 8:15pm came and went, I reported back to the bedroom to inform the sleeping beauty that my snack was nearing the end of its effectiveness and I would need an actual meal…soon. What’s the plan, Stan?

How did I get stuck with Panera on Friday night? Not having anything quick and easy on hand. And I shouldn’t say STUCK with Panera, because I love Panera…but I love homemade meals more. Always. Plus, quick and easy meals exist. Some are even quicker and easier than the Panera drive-thru 4 miles up the road. Truth!

And here, here is your proof. I am obsessed with these Mama Mary’s pizza crusts. They make for one quick and delicious meal that I won’t ever hear a complaint from Mr. P over. It’s a win-win, no doubt. Other than the random Friday night I’m starving to death, these are now always stocked in my pantry.

15-Minute BBQ Chicken Pizza

I'm smitten with Mama Mary's crusts and luckily, I've been able to find them in multiple stores without issue. They make for a great, fast, and delicious meal. We've tried several pizza recipes, but BBQ Chicken is a favorite!
Ingredients
  • 2 Mama Mary's Ultra Thin Crusts (1 package)
  • 1 cup BBQ sauce, divided
  • 16 oz cooked and shredded chicken
  • ½ tsp black pepper
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • ½ small red onion, thinly sliced
  • 5 oz 2% Mexican blend cheese, shredded
  • 1 cup cilantro, minced and divided
Instructions
  1. Preheat oven to 450 F.
  2. Arrange pizza crusts onto pizza baking sheets. Spread ⅓ cup BBQ sauce over the surface of the pizzas, leaving a small border around the outer edge.
  3. In a medium bowl, toss the cooked chicken with the black pepper, chili powder, and garlic powder. Drizzle the remaining ⅓ cup BBQ sauce over the chicken and toss to distribute.
  4. Spread the chicken over the surface of both crusts. Sprinkle the red onion slices over the pizzas followed by the cheese and half of the cilantro.
  5. Place pizzas in the oven and reduce heat to 400 F. Bake for 8 minutes. Allow pizzas to cool for 1-2 minutes before slicing; sprinkle with remaining cilantro. Cut into 6 slices each.

    I’ll have to look for these crusts! We love to do personal pizzas on pita bread for quick meals.

    Looks delicious!! What kind of BBQ sauce do you use? We love BBQ everything but I find that most brands have HFCS as one of the top ingredients, so I am always looking for new recommendations!

    Wow, that pizza look fantastic Nicole. We get in situations like that as well–home late, hungry, and with little energy to make something. This suggestions is a great one though.
