I’m truly pathetic.

Last evening, Mr. Prevention and I were catching up with the DVR. He’s over the moon that the show 24 is back…for now. For 12 hours vs. 24, but he’s still really pumped. I made it through the first hour, but during the second, I was passed out and snoring (so he says). It was 8:45pm. I didn’t wake-up until the show was over at 9:30 and promptly retreated to bed for the night. I read about 12 words on my Kindle before truly calling it quits for the day.

Pregnancy has been difficult for Mr. P — he claims my snoring is getting worse “by the day” and so after being woken up by him for the 71st time by 1:30am, I very begrudgingly sleep-walked my way to our guest bedroom…in the basement. Thankfully, 1:30am to 6:30am was a deep sleep and definitely what I needed. Except…I don’t want to sleep in the basement for the next 22 weeks.

As Mr. P and I met in the master bathroom to get ready for the day, I spewed off something along the lines of, “You get to drink, your clothes fit, you don’t snap, crackle, and pop like an old lady, and darn it, I am not going to be the one stuck in the basement indefinitely. I’M GROWING YOUR CHILD!”

Crickets, I tell you. He had no rebuttal to that rant and explanation of my RIGHTS!

What has my life come to?

Tonight? No motivation to cook, despite reeeally wanting something other than leftovers. However, leftovers are all the sweeter when someone else heats them up and serve them to you (thanks, hubz). Better yet, meals like Greek Nachos require no cooking or heating at all. Fact: these are now in a regular rotation in my kitchen. LOVE them.

Ingredients
  • 45 pita chips
  • ¾ cup hummus
  • 2 Roma tomatoes, diced
  • ½ English cucumber, peeled, seeds removed, diced
  • 1 Tbsp olive oil
  • 1 Tbsp red wine vinegar
  • ¼ tsp salt and black pepper, to taste
  • ¼ cup feta, crumbled
Instructions
  1. Spread 1 scant teaspoon hummus on each pita chip and arrange in a single layer on a plate.
  2. In a medium bowl, combine the diced tomato and cucumber. Drizzle with olive oil and vinegar; toss well. Sprinkle in the salt, pepper, and feta; toss and distribute over the pita chips. Serve immediately.

    My snoring was awful when I was pregnant, and my husband would very often end up in the spare bedroom during that time. Thankfully the day I had our daughter, the snoring stopped! Hope you’re feeling well otherwise!

    you are pregnant and you have every right to snore 🙂 i hope the whole experience goes well for ya…on a side note, why didnt i think of this salad before, it has all my favorites!

      Love your blog, and have learned a lot from you! I have a random question unrelated to this post (although I am planning to take these nachos to a party next week). I have a green smoothie almost every day, and I use spinach one week and kale the next. My other ingredients pretty much stay the same: banana, strawberries, chia seeds and Greek yogurt. Is it bad to eat the same fruits every day? I almost always have blueberries on my cereal in the mornings too. These are my favorites and I tend to stick with them. I eat a variety of veggies at dinner time, and have an apple for a snack many days. I have really worked on eating more fruits and veggies in the past year and have lost 45 pounds. I feel great but lately I have been wondering…can you get strawberry poisoning? 🙂

    With the weather heating up you may enjoy the coolness of the basement. Slept there last night myself on our couch since hubby didn’t want to turn on the air conditioning.

    I am very disturbed by the fact that I only just noticed that Feedly removed you from my list. What the heck! It has done that more than once with other blogs too. Crisis averted though because I fixed it. Now to catch up! Love these nachos.

    Mr P’s probably not going to get a lot of sympathy from your readers for having to put up with your snoring. The fact that you’re able to get a good sleep (even if you snore through it) is awesome and you should be taking advantage of that now.
    I’m lucky that Matt only snores when he’s sick and congested so I rarely have to sleep in the spare room.
