As you may know, our bulldog Lily is a complete and total beach bum. Problem is (other than living in Michigan and only having a few weeks of good beach weather), there’s about 85 stairs to get to the beach (this photo gives you the idea…). She seems to have no issue getting down the stairs, but the up part is a challenge…especially after a few hours of fun. This summer, she and I both struggled…a lot…getting up those stairs. 😉

My mom posted on her Facebook this video (you probably want to take 10 seconds to watch it and make you smile!) with the caption of “OK, for those of you who’ve NOT met Lily, our grand-dogger, you won’t get it…but I see this in her future.”

So imagine my enjoyment when Mr. Prevention forwards me this email from our home owner’s association:

“Earlier this summer I was approached by an owner who expressed an interest in an elevator to the beach. I contacted the people who do this, American Incline Elevators, and they came here to survey the situation. I am attaching their proposal for your review and consideration…”

Mark’s forwarded email said:

Did Lily request a quote for an elevator to the beach? 🙂

Hopefully that’s mildly amusing to other 😉 Yes, our dog is spoiled. But not to the tune of $11,000 for a lift to get to/from the beach. The lift to go up and down stairs? Unlikely, but we won’t rule out the possibility. We’ll just hope her beach days keep her young and agile. You know, since her diet could use some improvement and we’re always watching her weight.

Unlike most dogs, Lily isn’t always keen on eating “people food”. Rather, she’s quite particular about what she will eat, always sniffing and licking offered food before accepting. There’s a few sure bets, like meat and cheese, but there’s some surprising favorites in there, too.

Similar to myself, the dog LOVES pumpkin. Her nose was definitely working in over-drive as this Pumpkin Pie Bread baked away and we kicked off the beloved pumpkin season (it helps ease the doggy depression with the end of beach season). This bread was mildly sweet with a tender consistency and couldn’t be easier to make. Enjoy!

Pumpkin Pie Bread

Serves: 10 slices
 
Ingredients
  • 1 ½ cups whole wheat pastry flour or white wheat flour
  • 2 tsp cinnamon
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 eggs
  • ½ cup coconut oil, melted and cooled
  • ½ cup honey (or pure maple syrup or agave)
  • 1 cup pumpkin puree
  • 1 tsp vanilla
Instructions
  1. Preheat oven to 375 degrees and spray a loaf pan with non-stick cooking spray; set aside.
  2. In a large mixing bowl, whisk to combine the flour, cinnamon, baking soda, and salt; set aside. In a medium mixing bowl, gently whisk the eggs. Add the (cooled) coconut oil, honey, pumpkin, and vanilla; whisk well to combine thoroughly.
  3. Pour the wet ingredients into the dry and incorporate until just mixed using a rubber spatula; transfer batter to the prepared loaf pan.
  4. Bake pumpkin bread for approximately 40-45 minutes or until an inserted toothpick comes out cleanly. Allow to cool completely before slicing.

 Baby update: I am being induced next Friday (!!!) if Shea doesn’t decide to make an appearance before then 😀 Can’t hardly wait!!! And tomorrow is my last day of work. As I told my sister-in-law last night, if I had to put on nylons another week, I’d go insane. 😉
