Everyone told me that when Shea came along, the dog would take a way back seat. Untrue. There’s plenty of love in my heart to go around 🙂

It’s still the case that Lily gets full body massages in the mornings and cuddle time with both Mr. P and myself EVERY night in front of the TV, while she pretends to not love every single second of it…snoring away.

When I got home yesterday, Lily wasn’t keen on joining Shea and I on a walk (SO LAZY!!), so I grabbed her tennis ball and she had no choice but to follow along. The dog is obsessed with tennis and tennis balls. I threw the tennis ball every 50 feet or so, just to get her to walk. The weather was too beautiful to not enjoy, though Princess Lily prefers temps closer to the 80’s at which point she will sunbathe in the heat until she can hardly breathe. Literally.

Every morning, spoiled rotten Lily dog gets an “appetizer” – peanut butter spread on the inside of one of her bones. She waits for it and won’t eat her breakfast until after her appetizer.

Mr. Prevention is a 10-hours-a-night kind of sleeper and even he doesn’t complain about Lily’s need to go out to the bathroom EVERY night in the wee hours of the night. With her nighttime bathroom visits, this dietitian mommy and diabetes educator was just sure she had diabetes. It must have been coincidence that she was also drinking more water than usual because her tests all came back negative. THANKGOODNESS!!

As much as I love that dog, I would not have looked forward to diabetes all day at work and diabetes all night at home. And most importantly, she’s healthy.

While she begs and begs for human food always, we are pretty good about not giving her too many table scraps. But she does get them. Every day. Of course meat is her preferred people food with cheese coming in as a close second choice, but she’s also a carbohydrate lover (of course she’ll pass on the vegetables). I found myself picking around the chocolate chips in these pancakes in order to share with the dog. I was a little stingy still with these ‘cakes however…they were so, so good.

I didn’t dare share with Mr. Prevention that they contained chia seeds – he says they have a funny taste and texture. I say, you don’t even know they’re there and you’re getting some omega 3’s with breakfast. Plus whole grain, fruit, and your sweet fix, too. Enjoy!

Ricotta Chocolate Chip Banana and Chia Pancakes

Serves: 18 pancakes
 
Ingredients
  • 3 eggs, whites separated from yolks
  • 1 Tbsp sugar
  • ¾ cup low-fat ricotta cheese
  • ¾ cup nonfat milk
  • 3 very rip bananas, mashed
  • 2 Tbsp unsalted butter, melted
  • zest from 1 lemon
  • 1 Tbsp vanilla extract
  • 2 cups white whole wheat flour or whole wheat pastry flour
  • 1 tsp baking soda
  • ¼ tsp salt
  • 2 Tbsp chia seeds
  • ½ cup mini semi-sweet chocolate chips
Instructions
  1. In a stand mixer fitted with the whisk attachment (or use a hand held mixer), beat egg whites until they start to bubble. Sprinkle in 1 tablespoon of the sugar; continue beating until soft peaks form. Set aside.
  2. Combine the ricotta, milk, 3 egg yolks, mashed bananas, melted butter, vanilla and lemon zest in a separate, larger mixing bowl. Next add the white whole wheat flour, baking soda and salt, stirring gently until just combined.
  3. Stir a small scoop of the egg whites into the ricotta pancake batter to lighten the batter, then fold in the remaining whites with a spatula. Stir in the chia seeds.
  4. Heat a skillet on medium heat. Grease with butter or cooking spray. Pour ⅓ cup pancake batter on the center of the hot pan. Sprinkle each pancake with chocolate chips. Cook until bubbles appear on the surface. Using a spatula, gently flip the pancake over and cook the other side for a minute, or until golden. Repeat with the remaining batter.
