Guys have this head nod, finger raise kind of language that means, “Nice ride.”. I don’t speak it, but I’ve witnessed it my whole life. I grew up at a race track with my dad racing a 1968 Corvette and now I watch my husband speak this same language as we venture to the channel to put in the jet skiis. “Did you see that jet ski? See, I’m not the only crazy one,” he said.

Today was that day…a beautiful start to the long weekend. It was a whopping 75 degrees and sunny in Michigan so of course, Mr. P was itching to get on the jet ski. In the frigid water. Cheesing the whole way.

It was also our anniversary today. Six years. TIME FLIES. The weather today was actually just as it was on our wedding day. Mark my word – every May 23rd since 2009 has been STUNNING. In a few minutes we’ll go eat dinner out on a patio somewhere and we’ll soak up the vitamin D as we fondly file the memory away for the many moments in November or December…or January, February, or March when the warmth of the sun is a distant one.

Because the long weekend can’t possibly be gorgeous every day (is this REALLY too much to ask!?), we’ll plan to cookout tomorrow as Monday is looking stormy. It’s not Memorial Day weekend without something on the grill, right? Right.

I’m not sure what we’ll be grilling tomorrow, but I’m craving a hot dog after the latest issue of Cooking Light. And of course there will be burgers. It’s not a cookout without burgers!

In these avocado burgers, I used heart-healthy unsaturated fats from avocado along with super lean ground beef to avoid dry, flavorless burgers. It’s no secret that lean meats can get awfully dry, especially with dry heat cooking methods like grilling. The avocado, however, adds healthy fats that create a juicy burger with a nutritional edge.

Ingredients
  • ½ cup avocado (about ½)
  • 1½ tsp Worcestershire sauce
  • 3 Tbsp onion, minced
  • 2 cloves garlic, minced
  • ¼ tsp salt
  • ½ tsp black pepper
  • 1 lb 92% lean ground beef
Instructions
  1. Preheat grill to 400 degrees F.
  2. Meanwhile, mash avocado against the side of a large bowl using a fork until relatively smooth. Mix in Worcestershire, onion, garlic, salt and pepper. Add ground beef and mix until avocado is just incorporated. Do not over-mix.
  3. Form meat mixture into 4 patties, about ½-inch thick each. Grill 3-6 minutes per side or until desired doneness.

    Loving the avocado take on a healthy burger. It makes me feel good knowing I’ll be getting some healthy unsaturated fatty acids with my meal! ๐Ÿ™‚

    Oh my gosh for a second I thought that it was mainly avocado and I was blown away by how meaty it looked and wondering what magic you worked. And then Is aw the beef in the ingredient list haha. That being said however I still think this sounds amazing!
