Mr. P and I planned an afternoon date today – jet skiing!

When we booked our babysitter earlier in the week, the forecast was showing upper 70’s and sunny. For early June in Michigan, we were stoked. As the week progressed, the high dropped to just 72. But, it was sunny and so we stuck to our plan. Our babysitter arrived and we were off. We had heard the lake was choppy, so we were just going to cruise the channel and river going super slow – no wake, a mere 5 mph. I was looking forward to the relaxing afternoon.

Somewhere along the way, Mr. P convinced me that we should go “check out” the beach and go all the way out the channel and into the lake. We went north and the waves were ridiculous. Even he was agreeable to heading back. When we got near the channel, he convinced me that the south side of the channel looked like calmer waters and he wanted to check it out.

Sigh.

All was going well…until we decided to turn back towards the channel and Mr. P decided he needed to turn the jet ski on a dime (when he has the ENTIRE lake to do so!) and over we went.

At about 2:30pm today, I thought I was going to die of hypothermia in the middle of Lake Michigan…and I wish this were an exaggeration. A few other jet skiiers approached us (just as we were climbing back on the ski…) and informed us that the water had turned yesterday and the water temperature had dropped significantly (NO JOKE!!!). At that point, we weren’t close to the channel, so we mosied our way back. Brrrrrrrrrrrr.

We ended up SLOWLY going through the channel to the river and up to a river-front tavern for a late lunch.

Mr. P and I now have a running joke. The two times I’ve been jet skiing with him, we’ve ended up in the water. Last year, I was super pregnant (probably unwise on my part!) and today, into the SUPER cold water. He said he’s doubting he’ll ever get me on a jet ski again. I joked that my hobby — cooking and blogging — only benefits him. Home cooked meals nearly every night? Yeah, I got the short end of stick on the hobby front.

While I may not be jet skiing any time soon, and certainly not until the lake warms…I will be making these Garlic-Mustard Glazed Chicken Skewers again and again. The flavor was fantastic (my father-in-law even loved the leftovers!) and the smells coming off the grill…heavenly!

Garlic-Mustard Glazed Chicken Skewers

Serves: 8 servings (4 oz each)
 
Ingredients
  • ¼ cup whole grain mustard
  • 2 Tbsp Dijon mustard
  • 4 cloves garlic, crushed
  • 2 Tbsp white wine vinegar
  • 1 Tbsp low-sodium soy sauce
  • 1 Tbsp honey
  • 1 Tbsp rosemary leaves, finely chopped
  • 2 tsp Spanish paprika
  • ¼ tsp kosher salt
  • ¼ tsp freshly ground black pepper
  • 2 lbs chicken breast, cut into 1-inch pieces
Instructions
  1. In a small bowl, whisk together all of the ingredients (except chicken) to make the glaze; reserve ¼ cup. Add the meat to the remaining glaze, cover, and refrigerate for at least 30 minutes and up to 4 hours.
  2. Prepare grill to 375-400 degrees F. Thread meat onto skewers and grill the meat, 3-4 minutes per side, turning three times and brushing with the reserved glaze. Serve hot.

    Brrr I can’t imagine how cold the water must’ve been. These skewers look fantastically yummy though. Is Spanish Paprika the smoked (red) Paprika? Can’t wait to make these. Thank you for a gorgeous recipe. Sammie x http://www.feastingisfun.com
