Well, it was only a matter of time before my cell phone screen shattered into a web of dangerously sharp, malfunctioning disaster. I’m a bit careless with my phone at times and I have probably never used my cell phone more than since having a baby. Between middle of the night breastfeeding marathons and the endless need to capture everything in a picture or by video…the thing gets used and abused.

Growing up with dial-up internet, it’s incredible to now think of so many precious memories being stored in “the cloud”…whatever that is. I’m simply glad that I thought so lowly of my efforts to guard and protect my cell phone after the toilet disaster a few months back, that I purchased the protection plan.

As soon as my cell phone screen shattered this morning, my immediate thought was, “DARN IT! Now I’ll be spending my afternoon and evening in Verizon instead of working out.” I have the best intentions at 8am!

I logged on to my cell phone account online and found that a quick little online process to file a claim would result in a new cell phone being shipped to me overnight with just a deductible to pay. Awesome. I may, in fact, have time for a workout AND time enough to make dinner before the baby goes down tonight! Again, I have the best intentions at 8am…

While the baby has breakfast each morning, I am typically dicing her foods to be sent to daycare into baby bite-sized pieces and if I’m really on top of things, prepping a few ingredients for dinner. I’m learning that this whole mom business requires more planning and preparation than what was required when I was interning full-time and going to school full-time during my master’s degree. Insanity, really. People work FULL-TIME and are also rockstar moms? They’re priceless unicorns is what they are. I bet they’re not shattering cell phone screens just trying to get out of the house…or habitually running (at least) 5 minutes late.

So, while I cut my peppers, onion, and steak into little strips in the morning, I was deeply grateful when that evening all I had to do was throw it all on a baking sheet and toss with oil and spices. It pretty much doesn’t get any easier than that. And it’s not that fajitas are difficult to make, but I struggle to get the meat cooked through without the vegetables getting over-cooked or to find a skillet big enough that cooking everything through doesn’t take half the evening and overflow the sides of the skillet necessitating a deep clean of the range (I have nightmares about this chore!!). Easy, easy and very, very good!

Serves: 5 servings (about 2 fajitas each)
 
Ingredients
  • 3 Tbsp olive oil
  • 2 Tbsp fajita seasoning
  • 2 cloves garlic, minced
  • 1½ lb top sirloin steak, thinly sliced
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 large onion, sliced
  • 10 (6-inch) tortillas
Instructions
  1. Preheat the broiler to 500 degree F. In a small bowl, whisk the oil, fajita seasoning, and garlic.
  2. On a rimmed baking sheet, toss the steak, bell pepper and onion with the spiced oil until well-mixed.
  3. Broil, turning once, until the vegetables are browned in spots and the meat is charred and cooked to desired doneness, 8 to 10 minutes. Give care not to burn the fajitas - broiler temperatures can vary greatly.
  4. Serve the steak and vegetables in tortillas.

    I bought this cell phone case online that is impervious to anything – I’ve probably dropped it a billion times and I just pick it up and walk on – its stupid expensive, but I literally drop my phone every.single.day.
