6th Annual Chili Contest: Entry #4 – Taco Soup

When I have my way, I like to watch Sports Center in the mornings. Typically, Mickey Mouse Clubhouse is on in the background…but sometimes I get lucky. Sometimes I get lucky at night, too. Like last night when for about 15 whole minutes, I was ALONE in the kitchen, with a glass of wine, making a really great dinner, while Mr. Prevention and Shea played in the basement. It was glorious.

Sports Center is the best of sports in a quick delivery. As I wake up with my latte, I feel like I can take on the day as I see the world’s best athletes do what they do best. It’s my morning inspiration. And if you missed the Michigan vs. Michigan State game this year, you really need to watch. Thankfully, I saw that one live. Live from my living room, that is.

Other times, I’m not so lucky. Our little one is in a phase right now (are they not always in some kind of a phase!? My goodness) where she only wants MOMMY. Mommy, mommy, mommy. My back is beginning to feel the effects of carrying around a 26+ pound cutie at all times. And always on my left hip so I have my dominant hand free. Since, you know, life must go on.

Sometimes, I feel like my life could be on Sports Center. If it’s not impressive enough that I can cook, clean, play fetch with the dog, and drink wine with a baby on my hip, it’s certainly impressive that she can hold on for the ride.

My favorite part is when Mr. P thinks he can get off the hook with a quick, “She wants you, not me!” SIGH.

While my dinner last night was delicioso, it was way too ambitious for a Monday night. Even with my Sports Center-like mommy moves. It required a large pot, a large skillet, a big’ol strainer, a casserole dish, a cutting board, opening a bottle of wine for the dish…it was all just too much. Note to self, CHILL out on your culinary ambitions come Monday evenings.

Sometimes, you need ONE pot and a can opener. Simple. Easy. Quick. That’s more along the lines of what I want to take on for a Monday evening. Brought to you by this Taco Soup that’s ready fast and with little effort and minimal clean-up.

Serves: 14 cups (7 servings; 2 cups each)
 
Ingredients
  • 2 (15 oz) cans black beans, drained and rinsed
  • 1 (15 oz) can red kidney beans, drained and rinsed
  • 2 (11 oz) cans Mexicorn, undrained (corn with peppers)
  • 2 (10 oz) cans Rotel
  • 2 (6 oz) can tomato paste
  • 1 (15 oz) can stewed tomatoes
  • 1 lb 93% lean ground beef
  • 1 packet McCormick Taco seasoning mix
  • 2½ cups water, divided
Instructions
  1. In a large stockpot, brown ground turkey meat over medium heat, breaking up with a wooden spoon, until no longer pink.
  2. Turn heat to high; add taco seasoning and ½ cup water. Mix until meat is covered.
  3. Add all canned ingredients and remaining 2 cups of water; stir well.
  4. Bring soup to a boil, reduce heat, and let simmer on low for 20-30 minutes or until ready to serve.
