Today started at 4:19am when the baby started crying. Whoever thought up the concept of daylight savings time did not consider the havoc it would wreak with children. At 4:45am, it became very clear that my time in bed was over and off I went to start my day. Mr. Prevention offered to get up with the baby, but I knew it would be one of those mornings that I would lay in bed thinking of a million things I could be getting done and consequently, I was unlikely to fall back asleep anyway.

Mom problems.

I only had one cup of coffee because I had an hour long drive to my Certified Diabetes Educator exam this morning, followed by the 4-hour exam. I pulled into the parking lot of the testing center with 10 minutes to spare and plowed through my notes one last time.

When I was finally in the exam room, I knew my early morning wake-up was already catching up with me. I would read a question, read the answers, and have to re-read the question again entirely. It was almost as if I never read the question at all. I went blank. There were several times where I stretched in my seat and said it myself, “FOCUS, NICOLE. Just…focus.”

200 questions and a short wait for results later, I found out I passed! Woo!

Now, I just have to get through tomorrow’s Healthy Holidays with Diabetes event and cooking demo with over 100 hungry mouths to feed. You should’ve seen my co-workers and I whip up 10 pumpkin pies in a matter of minutes today. You’d think we had done this before or something…but, negative.

Once all of the food for this event is out of my house, it’ll finally be time to grocery shop. By Wednesday, I’ll probably be looking forward to a home-cooked meal, but I’ll probably want something on the simple side. Simple, but packed with flavor, of course.

This recipe has been quickly making the rounds among my foodie friends and it’s no surprise as to why. Everything bagels are perhaps my favorite bagel variety. The garlic, and salt, the savory…mixed with a smooth cream cheese. Yep, heavenly. With spices and a bit of cream cheese, chicken breasts quickly go from ordinary to extraordinary.

Ingredients
  • 2 (6 oz) boneless, skinless chicken breasts
  • 2 oz ⅓ less fat cream cheese
  • 2 Tbsp all-purpose flour
  • 1 egg + 1 Tbsp cold water
  • 1 Tbsp sesame seeds
  • 1 Tbsp poppy seeds
  • 1 Tbsp dried chopped/minced onion
  • ½ tsp coarsely ground sea salt
  • 1 tsp garlic powder
  • 1 Tbsp olive oil
Instructions
  1. Preheat oven to 400 degrees F; line a baking sheet with parchment paper and set aside.
  2. Slice a "pocket" into the side of each chicken breast and spread 1 ounce of cream cheese inside each chicken breast. Sprinkle half of the flour over the tops of the chicken, spread with hands to cover surface. Flip chicken breast to the other side and repeat with remaining flour.
  3. In one shallow dish, beat the egg with the water and set aside. In a second shallow dish, combine the sesame seeds, poppy seeds, minced onion, sea salt, and garlic powder; mix well.
  4. Working one at a time, dip each chicken breast in the egg and then the seeds mixture to coat on all sides. Repeat with second chicken breast.
  5. In a small skillet, heat the oil over medium-high heat. Once hot, add the prepared chicken breasts and cook 3-4 minutes per side or until golden; transfer to the prepared baking sheet.
  6. Bake chicken for 25-30 minutes or until chicken is fully cooked through.

    Congrats on passing the CDE and good luck tomorrow! I hope you can relax soon. Also, this chicken recipe looks great – you can never go wrong with a little cream cheese. ๐Ÿ™‚

    This looks amazing! I’ve been feeling pretty meh on meat lately (lentils and chickpeas have been my saving grace), but this makes me want to cook up some chicken tonight! Congrats on passing your exam!

    This sounds incredible! I love everything seasoning and have never considered using it for more than on homemade pretzels or bagels.
