Classic Sour Cream Baked Donuts

Days like today make me dream about being a homemaker. Or full-time blogger. Or something of the like. I love my job, but I love being home and having all sorts of flexibility a lot more, of course.

I didn’t set an alarm. I dropped off the kids without the rush of most mornings. I was in my gym clothes while doing it and had whatever make-up on my face that I went to bed with after my body shower last night. Isn’t it sounding glorious already? I dream big, let me tell ya.

I chatted with my mom as I sat in the parking lot of the gym. I hopped on the treadmill, read a chapter of my book, caught up with an old co-worker and Harlie’s old mommy (she gifted Harlie to us after not having the time to devote to a dog), and hopped into a spin class where I ran into a friend and fellow hockey player.

I haven’t been to a workout class in FOREVER. The times just don’t work. It becomes an obligation when it’s not a time that fits well into life and thus, I spend a LOT of time on our treadmill. So it was nice for a change. And challenging. Definitely challenging. I didn’t get my steps (I know, I’m a FitBit freak), but the sweat factor was definitely there. The instructor kept saying, “Keep your watts above 100!” Yep, mine were closer to 200 at many points throughout the 45 minutes.

I came home and walked Harlie while catching up with my bestie on the phone. Such pretty weather! I showered and sat out on the porch blogging. Tuesday is shaping up nicely, even if it does mean I’ll be working until 8:30 tonight. The change of pace is definitely welcome and needed.

Kind of like our weekend routine. It needs some adaptations. Including Mark STOPPING with the donuts. Every Friday on his way home from work he stops to get donuts. They sit on the counter ALL WEEKEND taunting me. It’s ridiculous. So, I decided this past weekend that I needed a healthier option. I’ve never recreated a baked version of my favorite donut before (sour cream!!), so here it is! Not a twin to the Real McCoy, but delicious, good enough, and far better health-wise. 🙂

Classic Sour Cream Baked Donuts

Serves: 9 glazed donuts
 
Ingredients
Donuts:
  • 1 cup all-purpose flour
  • ½ cup sugar
  • ½ tsp baking soda
  • ¼ tsp cinnamon
  • ¼ tsp salt
  • ½ cup sour cream
  • 1 egg, at room temperature
  • ½ tsp vanilla extract
  • ¼ cup canola oil
  • 1 Tbsp whole milk
Glaze*:
  • 1 cup powdered sugar
  • 3 Tbsp whole milk
  • ¼ tsp vanilla extract
Instructions
  1. Preheat the oven to 350 degrees F. Mist donut pan with nonstick cooking spray and set aside.
  2. In a medium-sized bowl whisk together the flour, sugar, baking soda, cinnamon, and salt. In a separate bowl, whisk together the sour cream, egg, vanilla, and oil; whisk until well-combined. Pour the wet ingredients into the dry and mix until fully incorporated.
  3. Using a spoon, spread the batter evenly in each donut cavity, filling just over half full.
  4. Bake for 13-15 minutes, until the donuts are golden brown and springy to touch. Remove from oven and let cool in the pan for 10-15 minutes, and then remove the donuts from the pan onto a cooling rack.
  5. Meanwhile, combine the ingredients for the glaze in a shallow bowl. After the donuts have come to room temperature, dip each donut into the glaze. For best results, serve immediately.
