Drunken Noodles (Pad Kee Mao)

You know how some weeks are just…crap. That’s this week. I haven’t had one in awhile so I guess I’m due for one.

Work has been stressful and I’m just frustrated. Details may not go here but if you were in my head, you’d be like, “Whoa”. Mark has a man cold and yesterday was his birthday. ‘Nuff said. The EEE virus is scaring our community into hiding. We can’t even apple pick this weekend! A Michigan fall without apple picking and hayrides? Depressing. It’s also supposed to rain ALL weekend. NOT COOL.

I had been asked to do a presentation for a somewhat local police department yesterday. I arrived to a room FULL of men and it was great to see an audience for an afternoon chat about healthy eating. It was a beautiful day to get out of the office, enjoy a little drive, and do something different from my daily grind.

You guys, they were SO rude. I talk LOUD and they talked louder. Through the whole presentation. When I was driving back to the office I thought to myself that I should’ve channeled my mom skills and just stood up there, silent, and waited for them to GROW UP and SHUT UP. It got worse when they CHEERED for the fast food slide in the presentation, LAUGHED when I began presenting meatless meal ideas, and then asked, “What’s the lethal dose of caffeine? That’s what we really need to know.” I mean, seriously? I play hockey with a bunch of doofus’ – I’m well-adjusted to shenanigans. This was just straight-up rude.

On their white board was a drawing of 10 hot dogs – the number of hot dogs one officer had consumed during their afternoon meeting. I wonder how many he consumed between the time I left and the time the meeting wrapped up…goodness me. It was not what I expected at all. To pick myself up on my way home, I picked up some local peaches, apples, and bell peppers (3 for $2!) at a farm stand. They’re all over our little community and it was just what I needed.

Had I to do it over again, I should’ve come prepared to hand out EASY meals. Ones that take very little time and effort. Things that kids of all ages will enjoy – from toddlers to man children. *eye roll* This recipe would qualify. Healthy? Healthy enough (sodium aside). Next time I might add some cabbage, but it’s a take-out fake-out that’s a healthier option, at least. Plus, it was gobbled up by my increasingly more choosy children…and delicious.


Drunken Noodles (Pad Kee Mao)

Ingredients
Noodles:
  • 8 oz dry wide rice noodles
  • 2 Tbsp peanut oil
  • 3 cloves of garlic, minced
  • 2 tsp chili paste (sambal oelek)
  • ½ onion, sliced
  • 8 oz boneless, skinless chicken thighs, cut into bite size pieces
  • 2 tsp fish sauce
  • 4 green onions, cut into 2-inch pieces
  • 1 cup Thai basil (or sweet basil) leaves
Sauce:
  • 3 Tbsp oyster sauce
  • 3 Tbsp low-sodium soy sauce
  • 2 tsp sugar
  • 1 Tbsp water
Instructions
  1. Prepare noodles per packet directions.
  2. Meanwhile, whisk together all sauce in a small bowl until well-combined; set aside.
  3. Heat peanut oil in wok or large- deep skillet over high heat. Once hot, add garlic and chili paste ; cook for 10 seconds. Add onion, cook for 1-2 minutes.
  4. Add chicken and fish sauce, and stir-fry until cooked, about 4-5 minutes.
  5. Add green onion, noodles and sauce and cook for 2 minutes until the sauce reduces and coats the noodles.
  6. Remove from heat and immediately add basil, toss until just wilted. Serve immediately.
