20 Minute Spicy Thai Noodles + Weekly Menu

Quarantine has me in crisis. I recently decided to give my blog a make-over for its upcoming 11th birthday and as I was sitting around my driveway like the classy woman that I am, I got to thinking about my brand. I’ve been “Prevention RD” since 2009 and I love it. I believe in prevention of chronic disease. I’m passionate about it! It’s my livelihood AND my passion. Lucky me! But is it…ME?

I really don’t know how to answer that.

When I think about ME, I don’t think of just one thing. I think about a lotttt of things and all things that I love – my family and kids, friends, reading, hockey, podcasting, cooking, tennis, writing, teaching, working, exercising, scrapbooking, running, cookbooking, and of course, blogging.

If you ask anyone who knows me, they know I’ve usually got about 718 irons in the fire at all times and you know what? I love it that way. I love diversity in my day-to-day life just like to have a diverse array of flavors in my life. More on that in just a sec.

So, anyway, sitting in my driveway I had the brand idea of “Busy as a Mother (RD)” come to mind and I thought 1. the edgy play on words is 100% me and 2. it’s fitting. It encompasses all of me, not just prevention. And if you read my posts or follow on Instagram, my brand really is all about being on-the-go, busy as a mom and busy as a friend, wife, athlete, coach, you name it! I posed the question to Instagram, but I think some people will always think of me as Prevention RD – I mean my first 2 cookbooks have Prevention RD in the title! It’s the name of my LLC. This is no small decision! HELP! Please help me decide!

In usual news, if you’re busy (had to) and/or LOVE spicy Thai flavors…you will love this recipe. I made it because I’ve made several of the like before and they’re always a hit. However, a few unique things – first, the carrots. I bulked those way up and loved it! Then, the toasted sesame oil and plenty of it! I wasn’t so sure because the flavor is strong, but it’s totally what makes this recipe! And TRULY, they are good hot, cold, or anything in between! Really enjoyed this recipe, we all did! The ready in 20 is a total bonus! 😉


20 Minute Spicy Thai Noodles

Serves: 8 servings (about 1 heaping cup each)
 
Ingredients
  • 1 lb linguine or fettucine
  • ⅓ cup toasted sesame oil
  • 1 tsp crushed red pepper flakes
  • 1½ tsp chili paste (Sambal oelek)
  • 6 Tbsp low-sodium soy sauce
  • 6 Tbsp honey
  • 2 cups grated carrots
  • 10 green onions, sliced
  • ½ cup finely chopped cilantro
  • ½ cup dry roasted peanuts
Instructions
  1. Bring a large pot of water to a rolling boil; cook pasta 7-9 minutes or until al dente. Drain and return to pot.
  2. Meanwhile, heat sesame oil and crushed red pepper in a small sauce pan over medium heat until hot and fragrant. Strain pepper flakes (to discard), and reserve oil in a bowl and return to sauce pan. Add the chili paste, soy sauce, and honey; whisk well over medium heat to heat until bubbly and heated through.
  3. Toss pasta with the carrots, green onion, cilantro, and peanuts. Pour sauce over the top and toss to combine. Serve hot, at room temperature, or cold.

    I prefer your existing blog name, but I think that’s because “Busy as a mother (RD)” makes me assume the blog will just be about having kids (or maybe kid nutrition?), and that doesn’t interest me. I’ll keep reading your blog no matter what you name it, but that name doesn’t really grab me.
