Coconut-Watermelon Cooler

My friend Kelly made it from St. Louis! We were college roommates (a long, long time ago!) and with the distance and all things life, we don’t get to see one another as often as we’d like! She has been working insane hours during COVID and we want to give her the full Michigan summer experience!

Glad I’m off work to play with her today because yesterday it rained all day. So, we did a 500 piece puzzle (donuts!) that Kelly, actually, had sent during quarantine. At that time, I’d just finished my 3rd or 4th quarantine puzzle and Mark willed me not to start another (I get obsessed). I guess that all happened for a reason because as it ends up, Kelly likes puzzles, too…and it helped fill our day indoors.

Our PLAN was blueberry picking. So after I hit publish here and drop the girls at daycare, we’re off to the fields. The picking is amazing and since we’re well-stocked on berries, I polled my Facebook friends for any takers and got a ton. I think between Kelly and I we have about 20 pounds to pick. We’ll see what kind of progress we can make in an hour or two!

Because THEN, it’s beach time! We considered renting a boat, but with the crap weather yesterday, I wasn’t feeling so hopeful about the water temperatures or waves. The beach will be perfect and much less crowded than on weekends. Wins all-around!

Other than berries and beachin’, we have to finish the movie Sing with the girls. We started it last night and promised to finish it this evening. My girls have clung to Kelly since the second they arrive – she will probably be leaving more exhausted than when she came! Sorry, Kelly!

Similar to all the watermelon I had to use up a few weeks ago (even after gifting much of it!), I’ll be getting creative with berries here reach quick. These are problems I love having, don’t let me fool you! The watermelon was a bit less versatile than berries, but these Coconut-Watermelon Coolers were the perfect cool-down after a beach day…or any time!

Coconut-Watermelon Cooler

Coconut-Watermelon Cooler

Yield: 44 ounces
Prep Time: 5 minutes
Total Time: 5 minutes

Cool off with this creamy and smooth coconut-watermelon combo!

Ingredients

  • 1 (15 oz) can coconut milk
  • 3 cups cubed seedless watermelon
  • 3 cups ice cubes
  • 3 Tbsp sugar

Instructions

  1. Toss all ingredients in a blender and blend until smooth. Serve immediately.

Notes

Add additional ice for a texture and consistency more like a slushie.
