Chopped Italian Salad

I’m so glad the Stanley Cup playoffs are over. I’m TIRED! This girl is not used to watching hockey until after 11pm on a regular basis. When the game went into a second over-time on Saturday, I gave up. I recorded the game and went to bed, returning to the TV the first thing in the morning to watch the outcome.

Because once I go to bed, I need to then wind down with some reading, if only for a few minutes. Playoffs aside, I am staying up later than usual because I’ve read some amazing books recently: A Good Neighborhood, In Five Years, All Adults Here, Watch Me Disappear, My Dark Vanessa, Beach Read, The Guest List, Eligible, The One, Things You Save in a Fire…the list goes on, but those are the highlights of the past few months. Hard not to read just One. More. Chapter!

Mark and I do the day-to-day coordination of who’s doing what kiddo drop off – Piper to school (10 minutes from home, right by my work) and Shea onto the bus (at the end of our road, 10 minutes from home). Aside from 1 day, I’ve avoided both little girl drop offs, so I’ve been making it to work by my usual 8:20/8:30am arrival…with enough time to give my mom a quick hello and grab my Panera Coffee Club coffee.

Today I used curbside pick-up and I don’t think I’ll ever go back. The snow, the rain…yep, skip! I can just chat up my mom and enjoy 5 minutes of peace before the work day begins. It seems like it’s one thing after the next lately. Tomorrow – picture day! Both girls, despite them being at different schools. I’ll have to be sure to allow plenty of time to tame their bed head into something presentable.

The evenings have also been a hustle. I’ve been getting home a bit later meaning I start my workout a bit later, pushing dinner back into TV and girlfriend couch snuggle time (my absolute favorite time of the day). As I look toward next week’s menu, I need to keep EASY top of mind. And not just easy, but quick! The quicker the better!

This recipe is definitely one to consider re-making. It was so easy and SO good. The sodium content is high but aside from that, it’s a meal worthy of being on repeat as much as possible. Not feeding a crowd? Assemble the salad and dress individual portions as you consume them. I assure you, you’ll happily eat this salad day in and day out! Sometimes, salads really are all about the add-ins!

Chopped Italian Salad

Chopped Italian Salad

Yield: 6 entree servings
Prep Time: 15 minutes
Total Time: 15 minutes

Sometimes...salads are about everything BUT the lettuce. So, so good!

Ingredients

Salad:

  • 2 large (3 average) heads romaine lettuce
  • 1/2 red onion, thinly sliced
  • 1/2 cup jarred pepperoncini rings, drained
  • 1/2 cup sliced black olives
  • 8 oz sliced provolone, cut into 1/4" ribbons
  • 8 oz sliced salami, cut into 1/4" ribbons
  • 12 oz cherry or grape tomatoes, halved

Italian Vinaigrette:

  • 4 cloves garlic, minced
  • 1/4 cup extra-virgin olive oil
  • 1/4 cup red wine vinegar
  • 2 Tbsp freshly squeezed lemon juice
  • 2 Tbsp dried oregano
  • 1 Tbsp Dijon mustard
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/4 tsp freshly ground black pepper

Instructions

  1. Wash and cut the romaine into ribbons or bite-sized pieces, as desired. Place in a large bowl.
  2. In a mason jar or container with a tight-fitting lid, combine all dressing ingredients. Shake vigorously for 20-30 seconds.
  3. Pour half the dressing over the salad and toss well to coat.
  4. Add the remaining salad ingredients, drizzle with remaining dressing and toss once more before serving.
