Tomato Cucumber Avocado Salad with Basil Pesto

My house has looked like a dollhouse since the day we moved in…over 8 years ago. My husband, he is slow to change. He also does not like to waste money. The plan was always to change the paint colors when it was time to re-paint the house. As in, when the paint NEEDED to be replaced.

Apparently, the time is now. There have been paint samples at my house since March and last week, apparently, was go time. Within a matter of minutes, I had locked down a paint and trim color. I’d wanted to go with navy, however, I didn’t want to copy my neighbor completely. I also learned from the painters that darker shades require more up-keep. So, we went with a light grey. As my mother says, my entire house is grey and I like to say, grey is both my favorite and very, very safe.

The painters got to work and not before they’d made significant progress, I took a look and thought, “Yeah, we could’ve gone a shade darker.” Since the days have been slightly less bright, though…the shade is great. It’s bright and fresh while also being very neutral. We’ve officially said goodbye to the yellows, blues, and pinks (yes, PINK) that our home was previously.

I’m sure our neighbors are rejoicing, too. If sharing an abundance of cucumbers all summer wasn’t neighborly enough, our home now looks a whole lot better. We’ve also got a little CSA share going on with the painters – we give cucumbers, they bring tomatoes. Win-win! I’ll miss them when they’re gone!

By tomorrow, the project should be wrapped up and I’ll be excited to check out the before and after shots. The project is also coming in under budget which makes the mister happy. As I said he’s all for saving money, however he also texted me a major surprise: bought a Peloton treadmill…delivery on October 6th!

I’ll definitely not complain about making a third GIANT batch of pesto this weekend. Our freezer is full of the stuff but we love it and we do NOT waste basil. Plus, I’m making all sorts of new pesto recipes. The Green Goddess Pesto-Squash Pizza was a recent favorite and this salad is the perfect way to utilize all that summer produce yield! If your pesto doesn’t contain much salt, add a pinch to bring out the flavors a bit more. Delish!

Tomato Cucumber Avocado Salad with Basil Pesto

Yield: 6 servings (scant 1 cup each)
Prep Time: 15 minutes
Total Time: 15 minutes

Pesto ties together a bunch of bright and colorful produce. This nutrition-packed side is a keeper!

Ingredients

  • 1 lb grape tomatoes, halved
  • 2 avocados, diced
  • 1 cucumber, sliced into half-moons
  • 1/3 cup diced red onion
  • 1/3 cup basil pesto*

Instructions

  1. Place tomatoes, avocado, cucumber, and onion in a large bowl.
  2. Add pesto and gently mix to coat evenly with pesto.

Next time I make this, I'm adding a bit of fresh mozzarella for a caprese-like salad

*store-bought pesto is great (and easy!) or...you can make your own - I love this recipe!
