Chickpea Chocolate Chip Cookies

We had McDonalds for dinner. So weird. My kids have probably had McDonalds a time or two when we’ve been on the road, but fast food is simply not a part of our lives….with the exception of Taco Bell a few times over the past year (that’s 100% dad right there).

But, Shea was awarded two $5 gift cards to McDonalds for behaving on the bus. Whaaaa? I mean, firstly, how misbehaved as the child been!? Plus, she’s 6. Plus, who’s funding this? All of it is just weird. And of course, since she was awarded these gift cards on Monday, she has been very curious as to how this will all go down.

You couple this with a crazy work week to the tune of Mark in the office by 7am after not having been in the office for a year and me being on double duty with the girls. Yawn. Mark and I both had every intention of working out after work, but instead, we went to McDonalds with the girls. I can’t say they’ve had a true drive thru experience, but…now they have.

They were quite fond of the Happy Meals and the Oreo Shamrock Shake was inhaled between the two of them. It’s the little things and can I just say how grateful I was to get out of dinner duty? I’m not sure what’s into me lately, but next week I need to not just plan the weekly menu but look at it so that meat can be thawed and prep can be done. You know, so the PLAN actually comes to fruition.

At least next week is a full week of school for both girls (those are rare, it seems) and other than podcasting on Monday night and a project presentation to surgeons come Tuesday evening, the week looks typical. We’re officially short-staffed on my team so I’m a bit anxious about the next few months.

With a team member having her last day today, it was a week of celebratory junk in the office. I was going to bring some of these cookies to share, but I figured it would be best to freeze some and bring them next week or some other time soon. As I was telling my dietitian coworkers all about these, interest was most definitely piqued! I’ve tried some pretty gnarly bean dessert recipes (gnarly bad) and let me tell you, this is not one of them! These cookies are sweet and delish! You’d never guess the chickpeas, much less how MUCH chickpea they include – it’s impressive!

Chickpea Chocolate Chip Cookies

Chickpea Chocolate Chip Cookies

Yield: 3 1/2 dozen
Prep Time: 15 minutes
Cook Time: 15 minutes
Total Time: 30 minutes

You'd never know these cookies are made with loads of chickpeas/garbanzo beans, which ups the fiber and nutrition big time! Gluten-free and dairy-free, these vegan cookies are a hit.

Ingredients

  • 2 (15 oz) cans garbanzos/chickpeas, drained and rinsed
  • 1/2 cup oats
  • 1/2 cup almond flour
  • 1/4 cup unsweetened applesauce
  • 1/4 cup creamy peanut butter
  • 2 tsp pure vanilla extract
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cup brown sugar
  • 1 cup chocolate chips*

Instructions

  1. Preheat oven to 350 degrees F.
  2. Combine all ingredients, except the chocolate chips, in a food processor or blender, scraping down the sides, as needed.
  3. Mix in the chocolate chips*.
  4. Using a 1.5 tablespoon scoop, scoop batter onto parchment-lined baking sheets.
  5. Bake for 14-16 minutes or until edges are golden. Allow to cool completely before serving.

*if you want pretty cookies, reserve about 1/2 of the chocolate to hand place on top of the cookies after scooping onto the cookie sheets
