Tex-Mex Chicken Lettuce Rollers + Weekly Menu

The past few days were a whirlwind. I was stressing about the girls’ birthday party last week at this time. The party was over in the blink of an eye, went super well, and we all feel so blessed with a tribe of friends that love our girls and showed up big time! As Mark was arriving (late) with pizzas and coolers of drinks, all the parents stepped in to help schlepp everything into the party room.

The parents were as loud as the kids, talking away. The Dominos pizza was worse that I remember it being. And the kids were bribed with many things in order to obtain a cute picture of the WHOLE crew of them…in front of the Pinterest-worthy streamer and balloon wall I put together. #nailedit

Sunday was spent with family, celebrating…again. The day flew by and the girls were off with their cousin ALL DAY, soaking up the time together and playing with their new toys. It’s like we fully transitioned into having ample adult time for catching up and it has been years since that was the case. It felt weird. As I was leaving for work this morning, I felt like I was with my kids all weekend and yet I craved the quality time with just them.

The girls and my parents, brother, and in-laws all came to the rink last night to watch my game. Mark was subbing on my team and it has probably been 5 years, if not more, since my family saw me play. I played a good first period before 1/3 of my blade came off FROM MY CUSTOM SKATES!!! By the end of the 2nd period, I was convinced to try rentals from the rink and rejoin the game. And, I scored. Go figure!

Knowing yesterday was going to be JAM packed, I had worked on our weekly menu early Sunday morning. I knew I had a recipe from last week to take another jab at making and I saw on the weather forecast: cooler temps are coming and comfort food is right around the corner. That said, I knew I needed to keep the week simple – the parties are behind us, but this week is busy in the evenings and my dinner motivation remains low.

A recent dinner win was a recreation from our local bar and grill – these lettuce rollers are a fan favorite on the menu and while I didn’t re-create precisely, these were quick and easy, delicious, and nutritious enough. We gobbled them up as a light dinner, but they can be served as a heavy appetizer too.

Tex-Mex Chicken Lettuce Rollers

Tex-Mex Chicken Lettuce Rollers

Yield: 10 prepared lettuce rollers
Prep Time: 15 minutes
Total Time: 15 minutes

Tender chicken and lots of fun, textured ingredients with a zippy chipotle ranch drizzle all served in a crunchy romaine lettuce leaf.

Ingredients

  • 10 romaine lettuce leaves,
  • 1 lb cooked chicken breasts, thinly sliced
  • 1 avocado, thinly sliced
  • 1 cup frozen corn kernels, thawed
  • 2/3 cup prepared corn and black bean salsa
  • 1/2 cup tortilla strips
  • 1/2 cup (2 oz) shredded cheddar cheese
  • 1/4 cup ranch
  • 1/2 tsp chipotle chili powder
  • 2 Tbsp buttermilk or low-fat milk

Instructions

  1. Lay lettuce leaves in a single layer. Fill each lettuce leaf with about 1 1/2 ounces of chicken and avocado.
  2. Mix together the corn and salsa in a small bowl. Put several tablespoons in each lettuce leaf.
  3. Top each lettuce leaf with tortilla strips and cheese.
  4. In a small bowl, whisk together the ranch, chipotle chili powder, and buttermilk until well-combined. Drizzle over the lettuce rollers and serve immediately.
