Christmas Favorites #4: Peppermint Oreo Truffles

A week later, my hand still isn’t the same. Arthritis brought on by holiday baking? Arm wrestling injury? I’m still as clueless as I was this time last week. But what’s going down today? My hockey team playing for the championship. Beer league champs – I like the sound of it. Wish us luck!

But first, I’m subbing on Mark’s team. I hope my less-than-able body or questionably able body can hold up. It has been a MINUTE since I played back-to-back hockey games. I was sure to take it easy yesterday with yoga. Which, for me isn’t really taking it easy. I’m no Gumby. Weird parts of me are a little achy.

The past week, I’ve made up little tins of Christmas goodies to go various places. People always ask, “What do you do with all of those sweets!?” Just this week: work, church, and book club. This coming week and beyond? Friendsmas, Christmas in Michigan, and Christmas in Illinois. Plus I’ve got a few tins to put together for friends and neighbors.

So as hard as it is to believe, I’ll be making more buckeyes at the very least. My father-in-law requests and wishes for far more than what remains and I’ll be tapping in some help when that time comes.

First up, before more sugar, is figuring out what I’m going to serve Christmas Eve when we have family in town. I’ve got a picky palate and 3 kiddos to feed. I vetoed my mother’s suggestion for a fiesta or burgers. I think I’m going to go with appetizers and finger food – meatballs, shrimp cocktail, gourmet-ish sliders, charcuterie, I’m not really sure. A day of noshing, perhaps…a little bit of something for everyone.

As the holiday events have come and gone, it’s always interesting for me to see what goes first. At my book club this year, it was the buckeyes that were requested but these Peppermint Oreo Truffles that were the star. While I’m all about peanut butter and chocolate, because…duh…there’s something so very Christmas-y about peppermint. I’m a big, big fan!

Peppermint Oreo Truffles

Peppermint Oreo Truffles

Yield: ~54 truffles
Prep Time: 15 minutes
Cook Time: 20 minutes
Additional Time: 20 minutes
Total Time: 55 minutes

A rich, peppermint-chocolate favorite! Best served chilled. Mmmm!

Ingredients

  • 36 Oreos (1 package)
  • 8 oz reduced fat cream cheese, softened
  • 1 tsp peppermint extract
  • 16 oz vanilla candy coating
  • ¼ cup crushed candy canes or peppermint candies, for decorating

Instructions

  1. Pulse Oreos in a food processor until finely ground.
  2. Add the cream cheese and peppermint extract; pulse to combine. The mixture will become sticky and wet.
  3. Roll the mixture into 1-inch balls and place on a baking sheet lined with parchment paper; repeat with remaining ingredients. Freeze truffles for 10-15 minutes.
  4. Meanwhile, melt chocolate according to package directions. Using a fork, carefully submerge each truffle and lift, allowing excess chocolate to drip off. Return truffle to parchment-lined baking sheet and sprinkle with crushed peppermint.
  5. Allow chocolate to harden before storing in an air-tight container in the fridge.

    Do you think using mint Oreos would be too much peppermint or would you reduce/eliminate the extract if you used those?
