I was running late home from work and I had 1 hour to prep for my lecture and make Mr. Prevention a meal fit for our anniversary. Time…there’s just never enough. But then again, there’s always planning ahead…and well, enjoying the weekend weather trumped lesson planning. If I’m being perfectly honest.
But, I persevered. And in the end, dinner was served. My lecture was planned. And I inhaled a delicious dinner in lightening speed. I recommend savoring this meal, but that will have to wait for reheated leftovers at lunch today. A woman has got to do what a woman has got to do.
So with this, the return of buffalo chicken. It’s been awhile and I know Mr. Prevention is not alone in his love for all things buffalo saucy. Riiiight?

Baked Buffalo Chicken Pasta slightly adapted from How Sweet It Is
1 lb whole wheat pasta
1 lb skinless chicken breasts, cooked and cut into chunks
1 Tbsp butter
1 Tbsp flour
1 1/2 cups fat-free milk
4 oz monterey jack cheese, grated
1/3 cup part-skim sharp cheddar cheese, grated
1/3 cup + 2 Tbsp buffalo wing sauce, divided
1/3 cup panko bread crumbs
salt and pepper, to taste
4 green onions, chopped
1/2 cup fresh cilantro
1/2 cup Gorgonzola cheese, crumbled
Directions:
Preheat oven to 375 degrees F.
Prepare water for pasta and cook according to directions.
While pasta is cooking, heat a medium saucepan over medium heat. Add the butter, and once it’s melted and bubbly add the flour. Whisk together to create a roux and cook for 1-2 minutes until mixture gets a bit golden in color. Add milk, stir and turn down heat to low. Continue stirring until milk thickens. Add in grated cheeses and continue to stir until mixture is smooth. Stir in 1/3 cup buffalo wing sauce. Taste and season with salt and pepper if needed.
Spray a 9 x 13 with non-stick spray. Add pasta and chicken, then pour cheese sauce over and mix thoroughly until everything is coated. Sprinkle with panko. Bake for 25 minutes or until golden brown. Remove from oven and immediately top with gorgonzola, green onions and cilantro. Drizzle with 2 tablespoons buffalo wing sauce. Yield: 6 generous servings.
Nutrition Information (per serving): 500 calories; 14.8 g. fat; 71 mg. cholesterol; 910 mg. sodium; 63.2 g. carbohydrate; 8.3 g. fiber; 37.5 g. protein
Result: Excellent! The gorgonzola and panko make this dish as incredible as it is. I didn’t know that there would be enough cheese sauce to go around and feared that the noodles may dry out some…but, nope! Perfection! Enjoy!

Thank you for all the compliments on our wedding photos and well wishes for our anniversary! It was a hurried one, but I got the sweetest card and a cute little “love fern” (house plant) 🙂 I will have to take a photo of the gift I made Mr. Prevention, but basically, it’s a framed map of the world with pins stuck in everywhere we’ve traveled to together (I got the idea here). I hope to put lots more pins on our map over the years 😀
I’m anxious for my workout today, though my plantar fasciitis has been rearing its ugly head again. 🙁 For those PF sufferers out there — I feel your pain, and it does not feel good!!

I love love love buffalo sauce! I’m trying to plan recipes to make for when I’m in CA and now you’ve really convinced me that buffalo sauce NEEDS to go on the list! This sounds delicious and love that it’s quick.
UGH to PF! I’ve (thank the lord) never had it (or knowing me, I have and have just beaten it into submission by continuing to run on it) but i can imagine. Hope it feels better soon!

This pasta dish sounds fabulous! I bet it would also be good if you substituted some of the gorgonzola cheese for bleu cheese. Yum!

For the PF…find a chiropractor who knows how to do the Grastn technique. It’s a method to essentially break down the scar tissue that has built up around that area in the foot so it can heal. It’s not pleasant but it, along with some ultrasound, has been the only thing to help my PF (in both feet mind you). PT, walking boots, steroid shots and a cast….none of that worked!

I’ve got one kid that would adore this meal, and one that would hate it, and one that wouldn’t touch it with a ten foot pole…lol Hubby would eat it, but probably complain…not all that into buffalo spice…but I would also adore it. Maybe cook it for just me and the kid sometime! ๐
