Last night, I met Donna for our first e-book discussion. As the saying goes, “Two brains are better than one.” I went into the meeting with one idea…and left out meeting with a completely new and better idea of what our e-book would consist of.

We even consulted our server for her opinion on a few things. Donna went as far as to tip the waitress $100 on a $29 bill (!!). Yes, you read right. No extra zeros in there. Donna is a hoot and a half for a lot of reasons, but I do love her for her generosity and good will towards people, especially her patients. And waitresses 😉

During our chat last night, Donna and I got on the topic of cookouts which was all too timely for today’s Recipe Swap post!

Jenna of Jenna’s Cooking Journey recommended BBQ Chicken Burgers as one of her top-rated BBQ/warm weather recipes. If I had had the time, I would’ve whipped together some homemade BBQ sauce to make this all the better. Regardless, these were a hit!

When I posted those Buffalo Chicken Burgers last week, several people asked if ground turkey could be subbed in for the ground chicken and the answer is absolutely, positively yes! Use whatever you can find…or whatever is cheapest.

TGIF, that’s for sure. The weather is supposed to be beau-ti-ful this weekend – 80’s and sunny! 5 o’clock can’t come soon enough with weather like that. I think revving up the grill will be in order and perhaps another round of chicken burgers!

These were a huge hit and went over better than even the Buffalo Chicken Burgers with both Mr. Prevention and myself. There’s something about those “traditional” lettuce and tomato toppings that send this over the top. It’s a little some different with a little something classic – the perfect BBQ/warm weather combination! Thanks, Jenna!

BBQ Chicken Burgers slightly adapted from Shine and Jenna’s Cooking Journey

1/3 cup + 1 Tbsp barbecue sauce, divided
1/3 cup reduced sugar grape jelly
2 Tbsp bread crumbs
1 tsp minced white onion
1 tsp garlic powder
1 tsp dried parsley
salt and pepper, to taste
1 lb ground chicken breast
1/4 cup Gorgonzola or blue cheese
4 whole wheat hamburger buns
1 tomato, sliced
4 large lettuce leaves

Directions:

Preheat oven to 425 degree F. Combine the 1/3 cup barbecue sauce and the jelly. Mix with a wire whisk; set aside

Meanwhile, in a bowl combine bread crumbs, 1 tablespoon barbecue sauce, white onion, garlic powder, parsley, 1/4 teaspoon salt, and 1/8 teaspoon ground black pepper. Add ground chicken; mix well.

Shape into 4 balls; place 2 inches apart on greased shallow baking pan. Moisten the bottom of a glass and press each ball to about 1/4 inch thickness. Bake for about 20 minutes. Construct burgers with Gorgonzola or blue cheese, lettuce, and tomato.

Yield: 4 burgers.

Nutrition Information (per burger): 395 calories; 6 g. fat; 71 mg. cholesterol; 866 mg. sodium; 52.8 g. carbohydrate; 7.8 g. fiber; 34.5 g. protein

Result: Great flavor…perfect for a barbecue or backyard get-together. I did make these in the oven, but they can most certainly go on the grill – just be sure to brush them with the BBQ sauce throughout cooking! Mmmm! Enjoy!

    Yours look fantastic compared to mine. I can’t wait until we have grilling weather here again (one day it is in the high 40s, the next the 80s…never know what weather you’ll have).

    I made these last night and we loved them. I didn’t feel like chopping into an onion for just 1 teaspoon, so I subbed with some dried minced onion and 1 chopped green onion. I also brushed some bbq sauce on my burgers when they were about 5 minutes from being done. We loved them!
