I am excited to make this today for my husband on Father’s Day! Beer, bacon and risotto- yes please!! My only comment is, you do not say what to do with the chopped, cooked bacon- I totally know it is meant to be eaten on top of or in the risotto, however I thought I would mention this to you so you could add that detail to the recipe instructions. Thanks for this fabulous recipe!

I am the worst at keeping in touch with former co-workers. I’ve worked with women that I’ve had lunch with every day for years and the second either I or they leave, it’s rare I’ll ever speak or see of them again. It’s like I close that chapter in the book and move on.

Funny story – when I was pregnant with Hannah I couldn’t stand the smell or taste of red meat, and I craved Asian food! Now 22, Hannah hates red meat and loves Asian food – she blames me for not introducing her to red meat in the womb! 😀

Risotto is one of my all time favorites. This recipe will go immediately into the rotation. Good luck with the acupuncture. It has helped me significantly in the past.

You had me at beer. Oh wait bacon too. You had me at bacon. I feel like you were describing where we live. It is chain restaurant after chain restaurant here. You child will be fine! My 7 yr old loves sushi, smoked salmon, miso soup, lentils, etc. Just start them out early and they won’t know better. I firmly believe we make picky eaters. Of course, there are days she hates all of her “favorite” food and only wants mac & cheese. Since she hated mac & cheese for the first 5 years of her life, I don’t mind that she likes it now.

I absolutely love this recipe! Then again, it has both beer and bacon in it so really where could you go wrong? I love the thought of playing with different beers to get different flavors! Can’t wait to try this soon. 🙂
