This was wonderful! I did make some changes to this recipe. I used an Organic Ancient Grain combo that includes Quinoa, Amaranth and Millet along with the oatmeal. I used coconut milk in place of the almond milk and I used liquid stevia in place of the maple syrup. For the fruit I added fresh strawberries, black berries and blueberries and banana because that is all that I had in my fridge. I sprinkled toasted pecans and reduced calorie Organic Coconut, finely grated on top! This came out great and will be a new replacement for the previous quinoa bake I used to make!! Thank you for sharing!

I really love this recipe! I just made it with a few alterations... rolled oats in place of quinoa, all fruit on the bottom and I made a brown sugar crumble on top (1/2 c flour, 1/2 cup brown sugar, 3 tbsp butter). Not the healthiest of choices I know, but we just decreased our serving size ;). It was pretty amazing. I will definitely be making this again soon, maybe even this weekend. Now I know how to finally use up all of the steel cut oats that I purchased on sale so long ago.
