Artichoke and Egg Salad Sandwiches

Classic egg salad...lightened up and with artichokes. There's nothing not to love about this exotic sandwich spread!
  • 1 (14 oz) can artichokes, drained and chopped
  • 3 hard boiled eggs, chopped
  • ⅓ cup nonfat plain Greek yogurt
  • ¼ cup lowfat mayonnaise
  • ⅛ tsp salt
  • ¼ tsp black pepper
  • 8 slices 100% whole wheat bread
  1. In a medium bowl, combine the arichokes, eggs, yogurt, mayonnaise, salt, and pepper, mixing well to gently combine.
  2. Toast the bread in a traditional toaster or toaster oven to desired doneness.
  3. Spread a heaping ½ cup of the artichoke-egg salad on each of 4 slices of toast, topping with a second slice. Serve immediately.
