Vanilla Pumpkin Pancakes

Breakfast classic and pumpkin delight meet to create some magic in these whole wheat, fluffy pancakes made to please!
Ingredients
  • 2¾ cups whole wheat pastry flour or white wheat flour
  • 1 tsp salt
  • 2 Tbsp baking powder
  • 3 Tbsp sugar
  • 2 cups pumpkin puree
  • 2 eggs
  • 4 tsp vanilla extract
  • 2½ cups nonfat milk
  • 1 Tbsp pumpkin pie spice
Instructions
  1. In a large bowl, combine flour, salt, baking powder and sugar, whisk to combine.
  2. In a second large bowl, whisk together pumpkin, eggs, vanilla, milk and pumpkin pie spice.
  3. Add the wet ingredients to the dry, stirring with a spoon.
  4. Heat a nonstick electric griddle over medium heat until hot. Scoop batter by heaping ⅓ cups onto the griddle, using the back of the measuring cup to spread the batter (it will be thick). Cook pancakes 3-4 minutes or until bubbles form on the surface; flip and cook an additional 1-2 minutes. Serve hot.
