Red Velvet Crinkle Cookies

Soft and chewy red velvet cookies with surprise white chocolate bits. These have a perfect Christmas look to them, don't you think?
Ingredients
  • 3 cups all-purpose flour
  • ¼ cup unsweetened cocoa powder
  • 2 tsp baking powder
  • ¼ tsp baking soda
  • ¾ tsp salt
  • ¾ cup unsalted butter, softened
  • 1⅓ cups sugar
  • 3 large eggs
  • 1 Tbsp non-fat milk
  • 1½ tsp vanilla extract
  • 2 tsp lemon juice
  • 5 tsp red food coloring
  • 1 cup white chocolate chips
  • ½ cup powdered sugar
Instructions
  1. In a large bowl, combine the flour, cocoa, baking powder, baking soda, and salt; whisk well and set aside.
  2. In the bowl of a stand mixer fitted with the paddle attachment, or in a large bowl using an electric hand mixer, cream the butter and sugar together until pale and fluffy. Add the eggs, one by one, mixing between additions. Add the milk, vanilla, lemon juice, and food coloring; mix an additional 20-30 seconds to incorporate. Fold in the chocolate chips. Refrigerate the dough for 2 hours or until the dough can easily be rolled.
  3. Preheat oven to 350 F.
  4. Roll dough into 1-inch balls and roll through the powdered sugar; transfer to a baking sheet lined with parchment paper. Slightly flatten each dough ball and bake for 12-14 minutes. Allow cookies to cool on baking sheet for 3-4 minutes before transferring to a cooling rack.
