Potato Chip Cookies
 
Ingredients
  • 1 cup unsalted butter, softened
  • ½ cup sugar
  • 1½ cups all-purpose flour
  • ½ cup crushed potato chips
  • ½ cup walnuts, finely chopped
  • ⅓ cup powdered sugar
Instructions
  1. Preheat oven to 350 F. Line 2 baking sheets with parchment paper and set aside.
  2. Cream butter and sugar in the bowl of a stand mixer fitted with the paddle attachment or in a large bowl with an electric hand mixer; beat until whipped and light in color.
  3. Add flour and mix until absorbed into butter. Add potato chips and nuts and mix well.
  4. Roll dough into 1-inch balls, arrange 2 inches apart on the baking sheets, and flatten slightly. Bake for 14-15 minutes or until slightly browned. Sprinkle with powdered sugar
