Cinnamon Whole Grain Power Pancakes

Serves: 30 pancakes (10 servings, 3 pancakes each)
 
Ingredients
  • 1 cup unsweetened vanilla almond milk
  • 2 cups low-fat cottage cheese
  • 4 whole eggs + 4 egg whites
  • 1 cup whole wheat pastry flour or white wheat flour
  • 1 cup old fashioned rolled oats
  • ¼ cup sugar
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • ½ tsp vanilla extract
Instructions
  1. Preheat a griddle to medium high heat.
  2. Place all ingredients in a blender and blend for 30 seconds, until smooth.
  3. Pour approximately ΒΌ cup pancake batter onto the hot griddle and cook for about 3 minutes or until bubbles form on top. Flip pancake and cook for another 1-2 minutes. Repeat with remaining batter.
