Pumpkin Pie Bread

Serves: 10 slices
  • 1 ½ cups whole wheat pastry flour or white wheat flour
  • 2 tsp cinnamon
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 eggs
  • ½ cup coconut oil, melted and cooled
  • ½ cup honey (or pure maple syrup or agave)
  • 1 cup pumpkin puree
  • 1 tsp vanilla
  1. Preheat oven to 375 degrees and spray a loaf pan with non-stick cooking spray; set aside.
  2. In a large mixing bowl, whisk to combine the flour, cinnamon, baking soda, and salt; set aside. In a medium mixing bowl, gently whisk the eggs. Add the (cooled) coconut oil, honey, pumpkin, and vanilla; whisk well to combine thoroughly.
  3. Pour the wet ingredients into the dry and incorporate until just mixed using a rubber spatula; transfer batter to the prepared loaf pan.
  4. Bake pumpkin bread for approximately 40-45 minutes or until an inserted toothpick comes out cleanly. Allow to cool completely before slicing.
