Nutty and rich, these pancakes only get better with some unsweetened shaved coconut on top!
Ingredients
1 cup cooked white quinoa
1 cup almond flour
¼ cup coconut oil, melted and cooled
2 eggs
1 cup unsweetened almond milk
2 Tbsp pure maple syrup
1 tsp vanilla extract
4 tsp baking powder
½ tsp salt salt
Instructions
Preheat a griddle to 375 degrees F.
Combine all ingredients in a blender and puree until smooth.
Pour batter using ¼ cup measures onto preheated griddle and cook pancakes 3-5 minutes or until the edges are beginning to look slightly dry. Carefully flip pancakes and cook an additional 1-2 minutes. Serve hot with desired toppings.
