Quinoa Almond Flour Pancakes

Nutty and rich, these pancakes only get better with some unsweetened shaved coconut on top!
Ingredients
  • 1 cup cooked white quinoa
  • 1 cup almond flour
  • ¼ cup coconut oil, melted and cooled
  • 2 eggs
  • 1 cup unsweetened almond milk
  • 2 Tbsp pure maple syrup
  • 1 tsp vanilla extract
  • 4 tsp baking powder
  • ½ tsp salt salt
Instructions
  1. Preheat a griddle to 375 degrees F.
  2. Combine all ingredients in a blender and puree until smooth.
  3. Pour batter using ¼ cup measures onto preheated griddle and cook pancakes 3-5 minutes or until the edges are beginning to look slightly dry. Carefully flip pancakes and cook an additional 1-2 minutes. Serve hot with desired toppings.
