Banana Nut Waffles

Serves: 4 servings
- 1½ cups white whole wheat flour or wheat pastry flour
- 2 Tbsp brown sugar
- 2 tsp baking powder
- ½ tsp salt
- ¼ tsp nutmeg
- ½ cup chopped walnuts or pecans
- 1 egg
- ⅓ cup coconut oil, melted and cooled to room temperature
- ¾ cup unsweetened vanilla almond milk, warmed for 20 seconds in the microwave
- ¾ cup overripe mashed bananas (about 2 small bananas)
- 1 tsp vanilla extract
- Heat waffle iron (medium-high temperature setting, if required).
- In a medium bowl, whisk together the flour, sugar, baking powder, salt and nutmeg. Stir in the chopped nuts and set aside.
- In a second medium bowl, whisk together the egg and coconut oil. Add almond milk, mashed banana, and vanilla extract; whisking well.
- Add wet ingredients to dry ingredients and stir until just combined.
- Pour batter onto the heated waffle iron, and cook 3-4 minutes or as specified by the waffle maker. Serve hot.
