  • 1 acorn squash, seeds removed and sliced into ½-inch rings (about 6)
  • cooking spray
  • 6 eggs
  • ½ tsp salt
  • black pepper, to taste
  1. Preheat oven to 400 F.
  2. Mist a baking sheet with cooking spray and arrange the squash rings in a single layer; mist top sides with cooking spray and bake for 8-12 minutes or until beginning to brown.
  3. Heat a large, nonstick skillet over medium heat. Once hot, add the squash rings and crack an egg into the center of each hole; cover with a lid and cook until yolks are cooked to desired doneness.
