Chicken Fajita Bake

Serves: 6 servings (about 4 ounces of chicken with ½ cup onion and peppers)
  • 3 Tbsp olive oil, divided
  • 1½ lbs chicken tenderloins
  • 1 packet taco seasoning
  • 1 onion, halved and thinly sliced
  • 1 red bell pepper, cored and thinly sliced
  • 1 green bell pepper, cored and thinly sliced
  • 1 cup 2% shredded Mexican cheese blend
  1. Preheat oven to 375 degrees F. Drizzle 1 tablespoon olive oil in the bottom of a 9x13-inch baking dish and add chicken; sprinkle chicken with half of the taco seasoning and toss well.
  2. Arrange sliced onion on top of chicken, sprinkle on remaining taco seasoning and drizzle with 1 tablespoon olive oil. Top onion with sliced bell peppers and drizzle with remaining 1 tablespoon olive oil.
  3. Bake for 40 minutes; remove and sprinkle with cheese. Continue baking an additional 5 minutes or until cheese is melted. Consume as is or serve in your favorite tortilla with toppings of choice.
