BLT Tostadas

Ingredients
  • 6 strips nitrate-free turkey bacon
  • 1 large avocado, pitted and diced
  • 3 Tbsp onion, minced
  • ¼ cup cilantro, minced
  • 1 Tbsp fresh lime juice
  • ¼ tsp salt
  • 7 corn tostadas
  • 3½ cups lettuce, shredded or sliced
  • 2 tomatoes, seeded and diced
Instructions
  1. Cook bacon until crispy; crumble and set aside.
  2. Using the back of a fork, mash the diced avocado until fairly smooth. Add onion, cilantro, lime juice, and salt; mix well. Top each tostada with avocado mixture and then with shredded lettuce, diced tomato, and crumbled bacon. Serve immediately.
