Liz's Chili

Ingredients
  • 1 Tbsp unsalted butter, melted
  • 1 large onion, chopped
  • 1 clove garlic, chopped
  • ¾ tsp salt
  • 2 tsp dried basil
  • 2 tsp chili powder
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • ½ tsp black pepper
  • 1 (15 oz) can diced tomatoes
  • 1 (15 oz) can kidney beans, undrained
  • 1 (8 oz) can corn, undrained
  • 6 oz chicken breast, cooked and diced
Instructions
  1. In a large saucepan or small pot, heat butter over medium heat. Once melted, add onion and sauté until soft. Add the garlic, stir, and cook until fragrant, about 30 seconds.
  2. Add salt and next 5 ingredients (through black pepper), stirring well to coat. Stir in remaining ingredients and simmer, uncovered, for 10-15 minutes or until hot.
