Blueberry Chicken Salad Lettuce Cups

Serves: 8 lettuce cups with ~1/2 cup chicken salad each
- ½ cup 2% plain Greek yogurt
- 2 Tbsp Italian Dressing
- 1 Tbsp Honey
- ⅛ tsp salt
- 2 cups skinless rotisserie chicken, shredded
- 1 cup fresh blueberries
- 1 apple, peeled, cored and diced
- ½ cup walnuts, chopped
- 8 leaves Boston or bibb lettuce
- In a large bowl, whisk together the yogurt, Italian dressing, honey and salt until well-combined.
- Mix in the shredded chicken, blueberries, diced apple, and walnuts until the yogurt mixture is fully coating all of the ingredients.
- To serve, scoop chicken salad into lettuce leaves and serve immediately.
