Cranberry Bacon Bleu Salad

Ingredients
Dressing:
  • ⅓ cup honey
  • ⅓ cup olive oil
  • 3 Tbsp rice vinegar
  • 2 Tbsp Dijon mustard
  • 1 Tbsp lemon juice
  • ½ tsp salt and black pepper, to taste
Salad:
  • 2 large heads romaine, chopped
  • 6 slices uncured bacon, cooked and crumbled
  • ½ cup (2 oz) crumbled blue cheese
  • 2 honeycrisp apples, cored and sliced
  • ½ cup dried cranberries
Instructions
  1. In a small bowl, whisk together the dressing ingredients until well-combined.
  2. Place chopped lettuce in a large bowl and drizzle with dressing; toss well. Add remaining salad ingredients and toss again. Serve immediately.
