Cranberry Bacon Bleu Salad

Serves: 5 entree portions
- ⅓ cup honey
- ⅓ cup olive oil
- 3 Tbsp rice vinegar
- 2 Tbsp Dijon mustard
- 1 Tbsp lemon juice
- ½ tsp salt and black pepper, to taste
- 2 large heads romaine, chopped
- 6 slices uncured bacon, cooked and crumbled
- ½ cup (2 oz) crumbled blue cheese
- 2 honeycrisp apples, cored and sliced
- ½ cup dried cranberries
- In a small bowl, whisk together the dressing ingredients until well-combined.
- Place chopped lettuce in a large bowl and drizzle with dressing; toss well. Add remaining salad ingredients and toss again. Serve immediately.
