Tortellini Soup with Italian Sausage and Spinach

Ingredients
  • 1 Tbsp olive oil
  • 1 lb sweet Italian turkey sausage, casings removed
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 (28 oz) can crushed tomatoes
  • 32 oz low-sodium chicken broth
  • 2 Tbsp fresh basil, chopped
  • ½ tsp pepper
  • 1 (9 oz) package fresh cheese tortellini
  • 1 (5 oz) bag fresh spinach
Instructions
  1. Heat oil a large pot over medium-high heat. Once hot, add diced onion and saute until onion is softened, about 5 minutes. Add the sausage and cook until no longer pink, breaking up with a wooden spoon. Add garlic and cook 30-45 seconds or until fragrant.
  2. Stir in crushed tomatoes, broth, basil, and pepper. Bring to a boil, reduce heat to low, and cover. Let soup simmer for 20-25 minutes.
  3. Add tortellini and simmer for about 8 minutes (or according to package directions). Add spinach and stir; cook for 1 minute or until wilted and tender. Serve hot.
