Paleo Italian Meatballs with Marinara Sauce

Serves: 32 meatballs (1.5 ounces each) or 8 servings (4 meatballs each)
 
Ingredients
Meatballs:
  • 1½ lbs ground pork
  • 1½ lbs 93% lean ground beef
  • 2 Tbsp Italian seasoning
  • 1 egg
  • 1 Tbsp parsley, finely chopped
  • 1 tsp salt
  • 1 tsp ground black pepper
Sauce:
  • 2 Tbsp olive oil
  • 1 onion, finely chopped
  • 5 cloves garlic, minced
  • 28 oz can crushed tomatoes
  • 1 bay leaf
  • 1 Tbsp parsely, finely chopped
  • 1 tsp black pepper
Instructions
  1. Preheat oven to 400 degrees F. Line a baking sheet with foil and set aside.
  2. Mix the pork, beef, Italian seasoning, egg, parsley, salt and pepper together in a large bowl until well-combined. Form meat mixture into meatballs using 2-3 tablespoons of mixture. Arrange meatballs on the prepared baking sheet.
  3. Bake for 20 minutes or until cooked through.
  4. Meanwhile, add the olive to a large pan over medium heat. Once hot, add the chopped onion and saute for five minutes. Add the garlic, tomatoes, bay leaf, and pepper; stir well and bring to a boil.
  5. Reduce heat to low and gently simmer 20-25 minutes. Add the cooked meatballs and gently stir to coat.
