Sweet & Salty Olive Oil Granola Clusters

Ingredients
  • 3 cups old-fashioned oats
  • ¾ cup pistachios
  • ½ cup slivered almonds
  • 1 cup unsweetened coconut flakes
  • ⅓ cup dried cranberries
  • ⅓ cup dried apricots, diced
  • ⅓ cup dried figs, diced
  • ½ cup maple syrup
  • ½ cup olive oil
  • ⅓ cup brown sugar
  • ¼ tsp salt
  • ½ tsp cinnamon
  • 1 egg white
Instructions
  1. Preheat oven to 300 degrees F.
  2. In a large bowl, combine the oats, pistachios, almonds, coconut, and dried fruit; mix until well combined. In a medium bowl, whisk together the maple syrup, olive oil, brown sugar, salt, and cinnamon until well-combined. Pour over oat mixture and stir until evenly coated.
  3. In a separate bowl, whisk the egg white until it becomes frothy and foamy (1-2 minutes). Mix into the granola mixture.
  4. Line a baking sheet with parchment paper. Spread the mixture in an even layer. Bake for 45-55 minutes, stirring every 10 minutes, to get evenly browned.
  5. Remove from heat and let cool completely. As it cools, it will begin to harden. Use your hands to break into clusters. Store in an air-tight container or resealable plastic bag.
