Greek Salad

Ingredients
Dressing:
  • ¼ cup olive oil
  • 2 tsp fresh oregano, chopped
  • ½ tsp garlic powder
  • ¼ tsp kosher salt
  • ¼ tsp black pepper
  • 1 Tbsp white wine vinegar
  • 1 Tbsp fresh lemon juice
  • 2 tsp Dijon mustard
Salad:
  • 1 large head romaine, chopped
  • 1 large red bell pepper, chopped
  • ½ English cucumber, chopped
  • 1 cup cherry tomatoes, halved
  • 12 kalamata olives
  • 1 oz feta cheese, crumbled (about ¼ cup)
Instructions
  1. Whisk together the dressing ingredients in a small bowl until well-combined; set aside.
  2. Place washed and chopped romaine in a large bowl; pour dressing over the top and toss to coat. Add the bell pepper, cucumber, and tomatoes; toss again. Serve topped with olives and feta.
