Pumpkin Spice Baked Oatmeal with Cranberries

Ingredients
  • 3 cups old fashioned oats
  • ½ cup brown sugar
  • 1½ tsp baking powder
  • 1½ tsp pumpkin pie spice
  • ½ tsp salt
  • ⅓ cup dried cranberries
  • 2 eggs
  • 2 cups unsweetened almond milk
  • 1 cup pumpkin puree
  • 1 tsp pure vanilla extract
  • 2 Tbsp coconut oil, melted and cooled
  • ¾ cup pecans
Instructions
  1. Preheat oven to 350 degrees F. Mist a 9-inch x 13-inch baking dish with nonstick cooking spray and set aside.
  2. In a large bowl, whisk together the oats, brown sugar, baking powder, pumpkin pie spice, salt, and cranberries.
  3. In a separate bowl, whisk together the eggs, almond milk, pumpkin puree, vanilla, and coconut oil; whisk until well-combined.
  4. Pour the wet ingredients into the dry and mix until just combined. Transfer to the 9x13-inch baking dish and evenly top with pecans.
  5. Bake for 45-55 minutes or until set. Cool for 10-15 minutes before serving. May also be served at room temperature or chilled.
