Red Velvet Donuts

Ingredients
Donuts:
  • 3 cups all-purpose flour
  • 6 Tbsp cocoa powder
  • 1 cup brown sugar
  • 1½ tsp salt
  • 1 Tbsp baking powder
  • 1⅓ cup low-fat buttermilk
  • 7 Tbsp coconut oil, melted and cooled
  • 1 Tbsp pure vanilla extract
  • 3 eggs, at room temperature
  • 2 Tbsp red food coloring
Frosting:
  • 8 oz reduced fat cream cheese, at room temperature
  • 3 Tbsp butter, melted
  • 2 cups powdered sugar
  • 2 Tbsp whole milk, plus more if needed
Instructions
  1. Preheat oven to 350 degrees F. Mist donut pan(s) with nonstick cooking spray and set aside.
  2. In a large bowl whisk together the flour, cocoa powder, brown sugar, salt, and baking powder. In a separate bowl whisk together the buttermilk, melted coconut oil, vanilla, and eggs. Gently fold the wet mixture into the dry mixture.Fold in red food coloring and stir until combined.
  3. Spoon mixture into prepared donut pan, filling just over half full. Bake for 10-12 minutes, or until the donuts spring back when lightly pressed. Allow doughnuts to cool a few minutes in the pan before transferring to a wire wrack to cool completely.
  4. Meanwhile, mix together all frosting ingredients in a small bowl. Spread frosting on cooled donuts.
