Shortcut Sausage Jambalaya

Ingredients
  • 1 pkg (8.8 oz) ready-to-serve brown rice
  • 1 Tbsp butter
  • 1 onion, chopped
  • 1 celery rib, chopped
  • 1 green bell pepper, chopped
  • 1 pkg (14 oz) smoked turkey kielbasa, sliced
  • ½ tsp garlic powder
  • ¼ tsp black pepper
  • ⅛ tsp cayenne pepper
  • 1 (14.5 oz) can no-salt-added diced tomatoes, undrained
  • ½ cup salsa
Instructions
  1. Microwave rice according to package directions.
  2. Meanwhile, heat butter in a large skillet over medium-high heat. Once hot, add onion, celery and green pepper; cook and stir 4-6 minutes or until tender. Stir in kielbasa, garlic powder, pepper and, cayenne; cook 4-5 minutes or until kielbasa is browned.
  3. Add tomatoes and salsa; heat through. Stir in rice and serve hot.
