Baked Chicken Burritos with Cheesy Green Chile Cream Sauce

Ingredients
Chicken:
  • 2 lbs boneless, skinless chicken breasts
  • ½ cup salsa
  • 3 Tbsp brown sugar
  • 1 (4 oz) can mild diced green chilies
  • 1 (14.5 oz) can diced tomatoes, drained
  • 1 Tbsp chili powder
  • ½ tsp salt
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • ½ tsp dried oregano
  • ½ tsp black pepper
  • ½ tsp ground chipotle chili pepper
  • 1 tsp liquid smoke
Cream Sauce:
  • 2 Tbsp extra-virgin olive oil
  • 1 Tbsp butter
  • 3 Tbsp all-purpose flour
  • 1 (14.5 oz) can low sodium chicken broth
  • ½ tsp ground cumin
  • ¼ tsp salt
  • ¼ tsp pepper
  • ½ cup whole milk Greek yogurt
  • 2 oz mild chopped green chilies, or more to taste
  • ½ cup reduced fat shredded sharp cheddar cheese
Burritos:
  • 6 burrito-sized tortillas
  • 1 cup reduced fat shredded sharp cheddar cheese
Instructions
  1. Place chicken in the bottom of slow cooker. Add all remaining ingredients for the chicken. Cook on high for 3-4 hours or on low for 7-8 hours. Remove chicken and shred between two forks. Strain the contents remaining in the slow cooker and return solids to slow cooker along with the shredded chicken; mix well.
  2. Preheat oven to 400 degrees F.
  3. Prepare burritos by adding about ⅔ cup chicken (1/6th of the chicken) to the center of each tortilla and top with 3 tablespoons cheese. Fold up one edge of the tortilla, tuck in both sides and continue rolling. Place burrito seam side down on a baking sheet. Repeat with remaining chicken and tortillas.
  4. Mist burritos with cooking spray and bake for 18-20 minutes or until golden.
  5. Meanwhile, prepare sauce by melting butter and olive oil in a medium saucepan over medium heat. Whisk in flour and cook, stirring constantly for 1-2 minutes. Reduce heat to low then gradually whisk in chicken broth. Add spices and bring to a simmer while stirring until thickened, about 2-3 minutes. Remove from heat and whisk in green chilies, cheese, and yogurt.
  6. To serve, top burritos with the Cheesy Green Chile Cream Sauce.
