1 Tbsp coconut oil high quality dark chocolate, melted*
arils from 2 pomegranates (about 2¼ cups)
1 tsp sea salt
Instructions
Heat chocolate and coconut oil in a microwave safe bowl on high for 2-3 minutes, stirring every 30 seconds, until melted and smooth.
Arrange one-third of the pomegranate arils across each of 12 wells in a muffin tin. Use a spoon to drizzle chocolate over the arils and repeat the layers two additional times. Sprinkle with sea salt.
Refrigerate for 1-2 hours to harden completely. Use a sharp knife to loosen each cup from the muffin tin. Keep refrigerated until serving.
