Chocolate-Cherry Oatmeal Cookies

Ingredients
  • ⅓ cup all-purpose flour
  • ⅓ cup whole wheat flour
  • 1½ cups old-fashioned oats
  • 1 tsp baking soda
  • ½ tsp salt
  • 6 Tbsp unsalted butter
  • ¾ cup packed light brown sugar
  • 1 cup dried cherries
  • 1 tsp vanilla extract
  • 1 large egg, lightly beaten
  • 3 oz (1/2 cup) bittersweet chocolate chips
Instructions
  1. Preheat oven to 350 degrees F.
  2. In a large bowl, whisk together both flours, oats, baking soda, and salt until well-combined.
  3. Melt butter in a small saucepan over low heat. Remove from heat; add brown sugar and stir until smooth.
  4. Add sugar mixture to flour mixture; beat with a mixer at medium speed until well blended. Add cherries, vanilla, and egg; beat until combined. Fold in chocolate.
  5. Drop dough by tablespoonfuls 2 inches apart onto baking sheets lined with parchment paper. Bake for 12 minutes. Cool on pans 3 minutes or until almost firm. Remove cookies from pans; cool on wire racks.
