Maple Pumpkin Oatmeal Breakfast Bars

Ingredients
  • ¾ cup oat flour*
  • 1½ cups old fashioned oats
  • 2 Tbsp chia seeds
  • 1 tsp pumpkin pie spice
  • ½ tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • 1 cup unsweetened almond milk
  • ½ cup pumpkin puree
  • ½ cup pure maple syrup
  • ¼ cup coconut oil, melted
  • 1 egg
  • 1 tsp vanilla extract
  • ½ cup pecan halves, roughly chopped
Instructions
  1. Preheat oven to 350 degrees F. Mist an 8x8-inch baking pan with nonstick spray and set aside.
  2. In a large bowl, whisk together the oat flour, oats, chia seeds, pumpkin pie spice, baking powder, baking soda, and salt; set aside.
  3. In a medium bowl, whisk to combine the wet ingredients: almond milk, pumpkin puree, syrup, coconut oil, egg, and vanilla extract.
  4. Pour the wet ingredients into the dry and mix until just combined. Fold in the pecan and transfer to the prepared baking dish.
  5. Bake for 35-40 minutes, or until the edges are golden brown and the center has set. Cool before slicing into 9 bars. Store in the refrigerator.
