Cranberry Maple Pecan Baked Oatmeal

Ingredients
Oatmeal:
  • 2 cups old fashioned oats
  • 1½ tsp ground cinnamon
  • 1 tsp baking powder
  • ½ tsp salt
  • 1¾ cup unsweetened almond milk
  • 5 Tbsp pure maple syrup
  • 1 egg
  • zest of 1 orange
  • 1½ tsp vanilla extract
  • 1 cup fresh or frozen cranberries, halved
  • ¼ cup chopped pecans
Cinnamon Glaze:
  • ⅓ cup powdered sugar
  • ¼ tsp ground cinnamon
  • 2 tsp maple syrup
  • 1-2 tsp low-fat milk
Instructions
  1. Preheat oven to 350 degrees F. Spray an 9-by-9-inch baking dish with cooking spray and set aside.
  2. In a large bowl whisk together the oats, cinnamon, baking powder, and salt. In a separate bowl, whisk together the almond milk, maple syrup, egg, orange zest, and vanilla extract until well-combined. Pour the wet ingredients in with the dry and mix until combined; fold in the halved cranberries and chopped pecans.
  3. Pour the mixture into the prepared baking dish and bake for 35-40 minutes or until the top is golden and the oatmeal is set. Let it rest for 5-10 minutes before serving.
  4. While the oatmeal rests, mix together all of the ingredients for the glaze. Drizzle desired amount of glaze over the oatmeal immediately before serving.
