Chocolate Chip Coconut Baked Oatmeal

Ingredients
  • 3 cups old fashioned oats
  • 1 tsp baking powder
  • ½ tsp salt
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • 3 eggs
  • ⅓ cup maple syrup
  • ¼ cup coconut oil, melted and cooled
  • 1 cup unsweetened almond milk
  • 1 tsp vanilla extract
  • ⅓ cup mini chocolate chips
  • ⅓ cup unsweetened shredded coconut
  • ⅓ cup chopped walnuts
Instructions
  1. Preheat the oven to 350 degrees F. Mist a 9 x 9-inch square baking dish with nonstick cooking spray and set aside.
  2. In a large bowl, whisk together the oats, baking powder, cinnamon, nutmeg, and salt.
  3. In a separate bowl, whisk together the eggs, maple syrup, coconut oil, milk, and vanilla extract.
  4. Add the wet ingredients to dry, and mix until combined. Stir in the chocolate chips (reserve a few to sprinkle over the top), coconut (reserve a tablespoon to sprinkle over the top), and walnuts until just combined; transfer to the preared baking dish and top with chocolate chips and coconut, if desired.
  5. Bake for 35-40 minutes or until light golden on top and firm. Slice into 9 squares. Store leftovers in the refrigerator; serve warm, chilled, or at room temperature.
