Ingredients
  • 16 oz linguine
  • 3 Tbsp low-sodium soy sauce
  • 3 Tbsp hoisin
  • 4 Tbsp honey
  • 2 tsp chili garlic sauce
  • 2 cloves garlic, minced
  • ⅛ tsp red pepper flakes, or more to taste
  • 2 Tbsp sesame oil
  • 2 zucchini, thinly sliced
  • 2 cups shredded carrots
  • ½ cup roasted, salted peanuts
  • ½ cup fresh cilantro, chopped
  • 2 green onions, chopped
Instructions
  1. Bring a large pot of water to a boil and cook noodles until al dente, approximately 6-7 minutes.
  2. Meanwhile, in a small bowl, whisk together the soy sauce, hoisin, honey, chili garlic paste, garlic, and red pepper flakes.
  3. In a large saute pan, heat sesame oil over medium heat and add sliced zucchini and cook for 2-3 minutes or until beginning to brown. Add the carrots and cook an additional 1-2 minutes. When noodles are done, drain and add immediately to pan, together with sauce, and stir until the noodles are well coated. Top with peanuts, cilantro, and green onion.
